One of a Kind Spiced Banana Bread
Ingredients
For the banana bread:
- 1 cup and 1/2 all purpose flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp salt
- 2/3 cup sugar
- 1/2 cup oats
- 1/4 cup canola oil
- 2 large eggs
- 1/3 cup milk
- 3-4 very ripe bananas
- 1 tbsp PanAfrica! Warm Spice Blend
- 1/2 cup crushed walnuts ** see note *
For the warm spice crumble:
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 2 tbsp all purpose flour
- 2 tbsp softened butter
- 1 tsp PanAfrica! Warm Spice Blend
Instructions
- Preheat your oven to 350 degrees
- Prepare a 9×5 loaf pan with either non-stick spray
- In a medium bowl, combine your dry ingredients (flour, oats, sugar, salt, baking soda, baking powder)
- In a large bowl, combine your wet ingredients (mashed bananas, eggs milk, oil)
- Fold in the dry ingredients into the bowl the wet ingredients until combined
- Fold in crushed walnuts and sprinkle in PanAfrica! Warm Spice Blend and set aside
- Make your warm spice crumble in a separate bowl by combining the flour, sugar, cinnamon, and butter and incorporate the butter with your fingers, pastry cutter, or fork, until the mixture looks like wet sand
- Pour half of your banana bread batter into your prepared dish then top with half of the warm spice crumble
- Pour remaining half of banana bread mixture into the pan and top with the remaining half of the warm spice crumble
- Bake at 350 for 50-60 minutes or until a toothpick or knife comes out clean and enjoy!
