Better Than The Restaurant Hand-cut Fries
Crispy on the outside, fluffy on the inside, hand-cut fries.
It took me a long time to figure out how to make the perfect hand cut homemade fries. Texture, color, and crisp are essential to a good fry. These fries are not perfect but they are better than my favorite restaurant. It turns out, its all about the method. By soaking the fries in cold water to remove some of the starch, parboiling, and double frying we created Better than the Restaurant Hand Cut Fries.
Better Than The Restaurant Hand-cut Fries
Crispy on the outside, fluffy on the inside, hand-cut fries.
Ingredients
- 2 potatoes
- canola oil or grapeseed oil
- salt to taste
- water for boiling potatoes
Instructions
- Slice potatoes, rinse off starch and soak in water for 15 minutes.
- Add to boiling water for 2-3 minutes.
- Remove from water and pat dry allowing potatoes to air dry for 1-2 hours.
- Fry at 300 degrees for 4-5 minutes until the potatoes are light skin
- Lightly salt fries & and allow to cool on a wire rack
- Heat oil to 350 degrees
- Fry another 1-2 minutes until crispy and golden brown. Add salt to taste.
