potatoes
canola oil or grapeseed oil
salt to taste
water
for boiling potatoes

Instructions
Slice potatoes, rinse off starch and soak in water for 15 minutes.
Add to boiling water for 2-3 minutes.
Remove from water and pat dry allowing potatoes to air dry for 1-2 hours.
Fry at 300 degrees for 4-5 minutes until the potatoes are light skin
Lightly salt fries & and allow to cool on a wire rack
Heat oil to 350 degrees
Fry another 1-2 minutes until crispy and golden brown. Add salt to taste.
