Crispy corn tortilla with fried egg, pico, candied jalepenos, and sour cream

Ever had huevos rancheros (ranch eggs)? There a ton of recipes online for this dish but traditionally it consists of a fried or poached egg, on top of a crispy fried corn tortilla, with cooked salsa. I created this recipe after having huevos rancheros at a restaurant and customized it to my taste. Instead of cooked salsa, I made a serrano pepper pico and The Most Delicious Candied Jalapeños for a bit of sweet heat. The sharp shredded cheddar cheese and sour cream cool down the heat from the peppers and compliment the runny yolk with the crispy tortilla.


First, I made a homemade pico with serrano peppers, tomato, red onion, cilantro, & lime. I seasoned the pico with cumin, chipotle powder, salt, & pepper. I refrigerated the pico until ready to use and it kept in the fridge for about 5 days.

Next, I fried the egg for 2-3 minutes in butter. I wanted my yolk runny so I made sure not to overcook the egg. I know runny eggs isn’t everyone’s things so make these eggs however you like. Scrambled with cheese or fried hard, it’s up to you!

After making the pico, fried egg, & corn tortilla, I assembled the tacos. Start with the corn tortilla, layer the egg, cheddar cheese, pico, sour cream, and candied jalapeños. This is such a delicious and filling breakfast. You should definitely make these “ranch eggs” or huevos rancheros for taco tuesday.

Ingredients

  • 4 eggs
  • 4 corn tortillas
  • 1/4 cup cheddar cheese shredded or grated
  • 1/2 cup canola oil
  • candied or pickled jalapeños

For the Pico

  • 1 serrano pepper minced
  • 2 tomatoes diced
  • 1/2 cup red onion chopped
  • 1/4 cup cilantro chopped
  • 2 limes juiced
  • 2 tsp cumin
  • 1 tsp chipotle powder
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  • Combine all ingredients for pico and refrigerate
  • Fry tortilla and season
  • Fry egg in butter or olive oil 2-3 minutes and flip careful not to break the yolk
  • Fry egg another 1 minute, remove from pan
  • Assemble tacos starting with the corn tortilla, followed by the fried egg, shredded cheddar cheese, pico, sour cream and candied jalepenos
  • Enjoy!
