Instructions
Combine all ingredients for pico and refrigerate
Fry tortilla and season
Fry egg in butter or olive oil 2-3 minutes and flip careful not to break the yolk
Fry egg another 1 minute, remove from pan
Assemble tacos starting with the corn tortilla, followed by the fried egg, shredded cheddar cheese, pico, sour cream and candied jalepenos
