cotija cheese
grated

mayo

lime
juiced

garlic powder

Instructions
Preheat oven to 425 degrees
Spray corn with cooking spray or drizzle with olive oil
Roast corn in the oven for 20-25 minutes or until the corn has spots of color
In a bowl, mix together mayo, seasonings and lime juice
Grate cotija cheese
Remove corn from oven, rub butter all over corn and lightly salt
Slather mayo mixture over corn
Top corn with cheese and cilantro
Enjoy!
