Instructions
Heat canola oil in a cast iron skillet or pan on medium heat
Peel green plantain
Chop plantain into 2 inch chunks
Fry plantain for 2-3 minutes or until light brown
Combine salt, water, garlic in a bowl
When plantain is cool enough to handle, lightly smash plantain with a small cup or bowl until flattened
Dip plantain in water mixture for 2-3 seconds and pat dry
Fry plantain again until golden brown and crispy
Salt tostones to taste
