This sugar & spice cookie is the perfect mix between a sugar cookie and a snickerdoodle. It's easy to make and you probably have most of the ingredients at home!
1cup2 sticks unsalted butter, melted and cooled for 5 minutes
1 1/2cupsgranulated sugar
1/4cuppacked light brown sugar
2large eggs
1tablespoonvanilla extract
3cupsall-purpose flour
2teaspoonscornstarch
1teaspoonsalt
1teaspoonbaking soda
1/2teaspoonbaking powder

1/2cupsugar
2tbspcinnamon
1tspnutmeg
1/4tspallspice

Melt butter and cool for 5 minutes
Combine sugar and spice mixture in a separate bowl, set aside.
In a large bowl or the bowl of a stand mixer with the cookie whisk attachment, beat together the melted butter, 1 1/2 cups granulated sugar, and the light brown sugar until combined.
Add the eggs and vanilla and beat until smooth
Remove the whisk.
Add in the flour, cornstarch, salt, baking soda, and baking powder. Mix with a spoon or spatula until well combined, but be sure not to over-mix.
Cover the dough and refrigerate for at least an hour.
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Scoop a 2-3 heaping tablespoons of cookie dough at a time and roll into balls, then roll the balls in sugar & spice mix to coat.
Place onto a large baking sheet about 2 inches apart. No more than 6-8 cookies at a time.
Bake for 12 minutes, or until the edges are beginning to set and the centers are still puffy and soft and seem underbaked.
Remove from the oven and allow cookies to fully cool on the baking sheet to set the cookies.

**Check your cookies around the 10 minute mark to make sure you don’t underbake**If you don't have a stand or hand mixer, follow the same instructions using a whisk, spoon or spatula and 2 mixing bowls.
