Crispy chicken bites with a sweet and spicy glaze
This bite-sized chicken with a sweet and spicy glaze is perfect as a snack, a meal over rice, or with our hand-cut fries. Delicious and budget friendly, this recipe is staple when entertaining guests or a quick weeknight meal. My secret ingredient for extra crispy chicken is egg whites. The protein from the egg whites prevents the crust from getting soggy and allows the chicken to reheat beautifully.
First, chop cleaned chicken into chunks, add your favorite spices and seasonings, with a drizzle of olive oil. Massage spices into the chicken and prepare wet batter.
Next, whisk egg whites and sparkling water together and pour mixture over seasoned chicken. Combine the chicken with the egg white mixture and set aside for 15 minutes.
Coat chicken in the cornstarch, flour mixture, carefully pressing the batter into the chicken with your fingers. Set aside, while oil heats for frying.
After chicken is crispy and golden, brush honey sriracha sauce on chicken bites. You can drizzle the leftover sauce on the chicken or set aside for dipping.
Honey Sriracha Chicken Bites
Ingredients
- 2 boneless skinless chicken breast
- 3 egg whites
- 1 cup flour
- 1/2 cup sparkling water
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp chicken bouillon powder
- 1 tsp salt
- 1 tsp smoked paprika
- 1 tsp hot chili powder
- 1/2 tsp cayenne pepper
- 1 cup canola oil or grapeseed oil
For the sauce
- 1/2 stick butter
- 1/4 cup sriracha
- 2 tbsp honey
Instructions
- Combine ingredients for sauce in a pot, bring to a simmer until thickened, set aside
- Cut chicken into bite sized piece (about 2-3 inches)
- Add spices and seasonings to chicken
- Combine flour and cornstarch in a separate bowl and set aside
- In a separate bowl, whisk together egg whites and sparkling water until frothy
- Add egg white mixture to seasoned chicken & marinate for 10 minutes
- While chicken is marinating, heat oil
- Dredge chicken in flour/cornstarch mixture, pressing the flour into the chicken making sure its completely coated and set aside
- Fry chicken for 2-3 minutes on each side or until light brown
- Rest chicken for 5 minutes and fry again
- Brush sauce on chicken on pour sauce over chicken and toss to coat
