Summer Roasted Corn with Cotija Cheese

Is it really summer if you haven’t had roasted corn? This is one of my favorite ways to enjoy roasted corn. This is a street-style corn that is easy to make. Roasted in the oven or on the grill, covered in a seasoned mayo and cheese and topped with cilantro, you won’t be able to eat just one.

Summer Roasted Corn with Cotija Cheese

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 4 Corn on Cob
  • 1 tbsp cilantro chopped
  • 1/2 cup cotija cheese grated
  • 1/2 cup mayo
  • 1 lime juiced
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • salt to taste
  • 4 tbsp olive oil or cooking spray
  • 2 tbsp butter

Instructions

  • Preheat oven to 425 degrees
  • Spray corn with cooking spray or drizzle with olive oil
  • Roast corn in the oven for 20-25 minutes or until the corn has spots of color
  • In a bowl, mix together mayo, seasonings and lime juice
  • Grate cotija cheese
  • Remove corn from oven, rub butter all over corn and lightly salt
  • Slather mayo mixture over corn
  • Top corn with cheese and cilantro
  • Enjoy!
