This sugar & spice cookie is the perfect mix between a sugar cookie and a snickerdoodle. It's easy to make and you probably have most of the ingredients at home!
Sugar & spice sugar cookies were one of the first baked goods I ever successfully made. They are my family’s favorite and so addicting. I’ve used them to make ice cream sandwiches and in banana pudding. They are always good. The best part is you probably have all (if not most) of the ingredients in your fridge & pantry.

The Perfect Sugar & Spice Cookie Recipe
Ingredients
For the cookie:
- 1 cup 2 sticks unsalted butter, melted and cooled for 5 minutes
- 1 1/2 cups granulated sugar
- 1/4 cup packed light brown sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons cornstarch
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
For the sugar & spice coating:
- 1/2 cup sugar
- 2 tbsp cinnamon
- 1 tsp nutmeg
- 1/4 tsp allspice

- Melt butter and cool for 5 minutes
- Combine sugar and spice mixture in a separate bowl, set aside.
- In a large bowl or the bowl of a stand mixer with the cookie whisk attachment, beat together the melted butter, 1 1/2 cups granulated sugar, and the light brown sugar until combined.
- Add the eggs and vanilla and beat until smooth
- Remove the whisk.
- Add in the flour, cornstarch, salt, baking soda, and baking powder. Mix with a spoon or spatula until well combined, but be sure not to over-mix.
- Cover the dough and refrigerate for at least an hour.
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- Scoop a 2-3 heaping tablespoons of cookie dough at a time and roll into balls, then roll the balls in sugar & spice mix to coat.
- Place onto a large baking sheet about 2 inches apart. No more than 6-8 cookies at a time.
- Bake for 12 minutes, or until the edges are beginning to set and the centers are still puffy and soft and seem underbaked.
- Remove from the oven and allow cookies to fully cool on the baking sheet to set the cookies.
