Tostones, which translates to “to toast” is one of the best foods I’ve ever eaten. The twice fried plantain is nothing like the sweet plantain you may be familiar with. They are starchy and not sweet, more like a potato. When fried they are crispy and delicious. Although popular in Mexico, you can find versions of this dish throughout the Caribbean.
This process includes frying the plantain twice. The plantain is chopped into chunks for the first fry.
Then the plantain is lightly smashed with a cup or bowl to prepare for the 2nd and final fry. While the plantain are warm, they receive a quick dunk in garlic-salt water. After patting dry, the plantain are fried again until crispy and golden brown.

The Best Tostones You Will Ever Make
Ingredients
- 4 Green Plantain
- 1 cup canola oil
- 1 cup water
- 5 garlic cloves smashed
- 2 tsp salt
Instructions
- Heat canola oil in a cast iron skillet or pan on medium heat
- Peel green plantain
- Chop plantain into 2 inch chunks
- Fry plantain for 2-3 minutes or until light brown
- Combine salt, water, garlic in a bowl
- When plantain is cool enough to handle, lightly smash plantain with a small cup or bowl until flattened
- Dip plantain in water mixture for 2-3 seconds and pat dry
- Fry plantain again until golden brown and crispy
- Salt tostones to taste
- Enjoy!
